FRESH FAVA BEAN STEW

Ingredients:
250gr. lamb stew meat
250gr. ground meat
350gr. fresh fava beans, shelled
1 egg yolk
1tbsp rose water
1tsp ground cumin
1 tsp ginger
2 drops "damla sakizi" (gum mastic)
1/2 tsp ground cinnamon
1 tsp salt
1/2 tsp dried coriander
4tbsp butter

How to Cook:
Melt the butter in a pot and add the stew meat. Add a little salt and the dried coriander and saute until the meat is browned. Cover with hot water and oil, kimming off the foam from time to time. When all the foam has disaappeared, let simmer. Miz the spices with the ground meat and shape into meatballs. Add to the pot and let simmer. Shell the beans and let stand briefly in hot water. Rinse wll and dreain, and then add to the pot with the meatballs and mix well. Let simmer until all the ingedients are cooked through. Sprinkle with the cumin, pepper, ginger, gum mastic and mix well. Mix a small amount of the hot meat liquid with the egg yolk, then add the mixture slowly to the meat. Sprinkle with cinnamon and rose water and leaave on a low fire until thickened.
Sounds like hard to cook, but if you manage to cook, it really is delicious..
